Yellow Squash Recipes

1. Preheat the Oven 

Preheat your oven to 400°F (200°C). This ensures that the oven is hot enough to roast the squash properly, giving it a nice, golden-brown color.

2. Prepare the Squash 

Wash the yellow squash thoroughly under running water. Cut off the ends and slice the squash into 1/4-inch thick rounds. Try to keep the slices uniform in thickness for even cooking.

3. Season the Squash 

Place the squash slices in a large mixing bowl. Drizzle with olive oil, then sprinkle with garlic powder, dried thyme, salt, and pepper. Toss the squash slices until they are evenly coated with the oil and seasonings.

4. Arrange on a Baking Sheet 

Line a baking sheet with parchment paper or lightly grease it with cooking spray. Arrange the seasoned squash slices in a single layer on the baking sheet. Ensure that the slices are not overlapping, as this will help them roast evenly.

5. Roast the Squash 

Place the baking sheet in the preheated oven. Roast the squash for about 20-25 minutes, flipping the slices halfway through. The squash is done when it is tender and lightly browned on the edges.

6. Add Parmesan  

If you like, sprinkle the grated Parmesan cheese over the squash slices during the last 5 minutes of roasting. This will allow the cheese to melt and form a crispy, golden topping.

7. Serve 

Remove the baking sheet from the oven. Transfer the roasted squash to a serving platter and enjoy it hot. This dish makes a great side for grilled meats, pasta, or as a part of a vegetarian meal.
