Summer Squash Recipes

1. Preheat the Oven 

Preheat your oven to 400°F (200°C). This ensures the oven is hot enough to roast the squash properly.

2. Prepare the Squash 

Wash and dry the summer squashes. Cut off the ends and slice them into 1/4-inch thick rounds. You can also cut them into half-moon shapes if the squash is large.

3. Season the Squash 

Place the sliced squash in a large bowl. Add the olive oil, minced garlic, salt, pepper, and dried herbs. Toss everything together until the squash slices are evenly coated.

4. Arrange on a Baking Sheet 

Spread the seasoned squash slices in a single layer on a baking sheet. Ensure they are not overlapping too much to allow even roasting.

5. Roast the Squash 

Place the baking sheet in the preheated oven. Roast the squash for about 20-25 minutes, or until the edges are golden brown and the squash is tender. You can turn the slices halfway through for even cooking.

6. Add Parmesan  

If using Parmesan cheese, sprinkle it over the squash slices during the last 5 minutes of roasting. This will allow the cheese to melt and form a delicious crust.

7. Serve 

Once roasted, remove the squash from the oven. Transfer to a serving dish and garnish with fresh parsley or basil if desired. Serve hot as a side dish or add to salads and pasta.
