1. Prepare the Ingredients 

Wash and dry garlic scapes, then cut into 1-inch pieces for easier blending.

2. Toast the Nuts   

If using raw nuts, toast them in a dry skillet over medium heat for about 5 minutes, stirring frequently, until they are golden brown and fragrant. Let them cool.

3. Combine Ingredients 

Place the garlic scapes, toasted nuts, grated Parmesan cheese, and lemon juice in a food processor.

4. Blend the Mixture 

Pulse the food processor a few times to start breaking down the ingredients. This helps to evenly distribute everything before adding the oil.

5. Add Olive Oil 

With the food processor running, slowly pour in the olive oil. Continue blending until the mixture is smooth and well combined.

6. Season to Taste 

Taste the pesto and add salt and pepper as needed. You can also add more lemon juice if you prefer a tangier flavor.

7. Adjust Consistency 

If the pesto is too thick, you can add a little more olive oil or a splash of water until you reach the desired consistency.

8. Store or Serve 

Transfer the garlic scape pesto to a jar or container. It can be stored in the refrigerator for up to a week. Use it as a sauce for pasta, a spread for sandwiches, or a dip for vegetables.
