Blackberry Jelly Recipe

1. Gather Ingredients 

You'll need 4 cups of blackberries, 3 cups of sugar, and 1 tablespoon of lemon juice.

2. Prepare the Berries 

Wash the blackberries thoroughly. Mash them in a large pot to release their juices.

3. Cook the Blackberries 

Add the mashed blackberries to the pot with 1 cup of water. Bring to a boil, then reduce the heat and simmer for 5 minutes.

4. Strain the Juice 

Pour the cooked blackberries through a fine-mesh strainer or cheesecloth into another pot to separate the juice from the seeds and pulp. You should have about 4 cups of juice.

5. Combine Ingredients 

Add the blackberry juice, sugar, and lemon juice to the pot. Stir well to combine.

6. Boil the Mixture 

Bring the mixture to a rapid boil, stirring constantly. Continue boiling until it reaches the gel stage (about 220°F or 104°C), which should take around 10-15 minutes.

7. Jar the Jelly 

Remove the pot from the heat and skim off any foam. Pour the jelly into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars and let them cool. Once cooled, store them in a cool, dark place.
